A Natural Choice: Carrie Nielsen named Executive Chef of GOOD EARTH® restaurant in Edina
Minneapolis, Minn., February 27, 2012 GOOD EARTH in Edina has always been a Farm-to-Table restaurant, and in Carrie Nielsen it boasts a true farm-to-table chef.
I was born into a farming family in Everly, Iowa, the daughter of an expert home cook whod not only mastered pickling, preserving and head cheese-making, but grounded me in classical French cooking techniques, says Carrie.
My mother grew much of her own food, and had total respect for it. Thats the philosophy I bring to GOOD EARTH.
Scratch cooking from the best ingredients is everything.
GOOD EARTH provides great opportunities for a chef, says Carrie. I can source the best local products and have them delivered directly from the farm. I enjoy chatting with farmers and building relationships. And I love the idea of introducing great ingredients to the diversity of our guests in our dining room, through our catering, and at our deli.
Having come from Salut Bar Américain, Im also looking forward to introducing guests to some French flavors, too Provençal in the spring and summer, moving more into Alsatian when the colder weather hits.
And as part of our mission to serve food that people can feel truly good about eating, Im excited to work with Chef Tim McKee in continuing our monthly spotlight on great ingredients.
Right Now: A focus on flax seed, jicama and watercress
The nutritional profiles of these ingredients are amazing, explains Nielsen. Flax seed is a superb source of Omega-3s. Jicama abounds in vitamins, and watercress is rich in calcium and other minerals. But the really exciting thing is how great they taste.
