Minneapolis, Minn., November 1, 2013 On the occasion of GOOD EARTHs 35th anniversary, Minnesotas pioneering natural foods restaurant is celebrating its roots. And grains. And locally sourced foods, homemade bakery offerings, irresistible teas and much more. The Celebration Extends from November 1- 15.
At both the Edina Galleria and Roseville locations, GOOD EARTH invites guests to join in the anniversary celebration.

Ageless and ever green: How GOOD EARTH stays fresh
Healthy, natural foods have never had greater resonance culturally, says Phil Roberts, head of Parasole Restaurant Holdings. GOOD EARTH understood the importance of truly eating well back in 1978, and since then the rest of the culture has caught up.
Today, more than ever, people care about their foods provenance where it comes from, who grew it, how it was grown and GOOD EARTH provides the reassurance they seek. As far as quality and sustainability, we couldnt be more on-trend.
But GOOD EARTH remains relevant in other key areas as well, contends Roberts.
It really is hard to beat us on value. And its not just that our prices are low its the quality you receive for the price. People are responsive to that.
And then theres taste. With a chef like Tim McKee shaping so much of our menu, our flavor profiles have never been better. Whatever stigma healthy eating might once have had, thats totally out the window. GOOD EARTHs food holds its own against virtually any other restaurant.
Respecting tradition while steering a movement
GOOD EARTH Carrot Cake. The famous Cashew Chicken Salad. Some dishes are eternal. But for Donna Fahs, the Parasole veteran who oversees the restaurants, the real hallmarks of GOOD EARTH can be found among the restaurants monthly specials.
Were always searching out the best, freshest, seasonal ingredients to offer our guests, says Fahs, The entire menu reflects that philosophy, but it comes into vivid focus in our specials. In November, for example, were celebrating three spectacularly nutritious and delicious ingredients the pomegranate, wild rice, and wild mushrooms. Theyre central to specials ranging from our Pomegranate Strawberry Smoothie to Wild Mushroom Risotto, which also features KCs Minnesota wild rice, red chard, fresh thyme and sautéed garlic.
Another favorite of Fahs: The Harvest Pomegranate Salad marries chicken breast with baby kale, sliced apples, roasted pumpkin, pomegranate seeds and toasted walnuts. Its tossed in an apple cider vinaigrette and garnished with goat cheese and a pomegranate reduction. I could eat it every day.
Every month, the specials sheet includes approximately a dozen offerings. Its a great way to keep things fresh for our guests, showcase the creativity in our kitchen, and highlight the incredible bounty in our midst, says Fahs. Really, thats what the GOOD EARTH is all about.
